If you are looking for a traditional summer breakfast this is probably not it, but personally, I’m addicted. This breakfast is so fresh, so healthy and it leaves me feeling satisfied for hours. So if a great start to your day is what you’re looking for, well, don’t knock it until you’ve tried it!
Ingredients
- 3 hard boiled eggs
- 5 strawberries
- 1 persian cucumber
- 1 handful herb of choice (I usually rotate between basil, mint and dill in this)
- 1/3 avocado (optional)
- 1/2 tbsp olive oil
- sprinkle of sea salt
- spurt of balsamic glaze or balsamic vinegar
Directions
- Cook and let hard boiled eggs cool to at least room temperature*. Chop into bit size pieces (halved and then quartered again).
- Wash and hull strawberries and cut into quarters.
- Wash and halve a persian cucumber. Slice each half into bite size pieces.
- Cut up your herb of choice.
- Dice your avocado if using.
- Mix the eggs, strawberries, cucumbers, herbs and avocado together in a bowl.
- Drizzle with olive oil, balsamic and a sprinkling of salt.
Optional: If you don’t like the idea of the egg you can replace it with 1 cup of cottage cheese to keep it high protein.

*Quick Tip! I make my hard boiled eggs in the morning and want to make it as easy as possible. All I do is bring the eggs in water to a boil, cover the pot, turn off the stove and walk away. I come back later (approximately 20 minutes but I never time it) and dump the hot water, replace it with cold ice water and peel the eggs! So easy and no timers needed.
