As much as I have become a creature of habit with my breakfast choices as of late, every once in a while I like a little variety and this one is a winner! These Hight Protein Scrambled Oats Bowls are so yummy and feel so decadent for such a healthy breakfast. Not only do they provide over 30 grams of protein per bowl, they are full of soluble fibre from the oats so are great for lowering your cholesterol and keeping you full for hours!
Ingredients
- 1/2 mashed banana
- 1/4-1/2 cup quick cook oats
- 1 egg
- pinch of sea salt and cinnamon to taste
- a small splash of vanilla extract
Serve Over:
- 1/2 cup plain Greek yogurt
- 1/2 scoop vanilla, chocolate or strawberry protein powder
Topping options:
- 1/2 cup blueberries and slivered almonds (over the vanilla protein yogurt)
- 1/2 banana and a drizzle of natural peanut butter (over the chocolate protein yogurt)
- 1/2 cup sliced strawberries and pecans (over the strawberry or vanilla protein yogurt)
Directions
Mash the banana and mix with the oats, egg, sea salt, cinnamon and vanilla, give it a minute to absorb into the oats while you preheat your pan. Lightly grease the pan with butter or oil of choice and put the oats mixture into the hot pan. Keep moving the oats around to prevent them from sticking to the bottom and cook until they look ‘dry’, approximately 7-10 minutes. Remove from the heat to cool slightly.
As the oats are cooking mix your Greek yogurt with your protein powder of choice. Note: if you don’t have or don’t like protein powder no worries, you can just serve the yogurt plain, you will just have a little less protein per serving.
Put the yogurt mixture into a bowl, spoon the oats over top of the yogurt and then add one of the topping options listed above, or get creative and try something of your own invention!
