This high protein vegan edamame mango salad is easy to make and makes the perfect meal or side salad.
- 2 cups edamame
- 1 medium cucumber diced
- 3 small mangoes, peeled and diced
- 1 medium red onion, diced
- 1 can of corn,drained and rinsed
- 1 tbsp fresh basil, finely chopped
- 1 clove of garlic, minced
- 1 tbsp red wine vinegar
- 1 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 2 tbsp fresh lime juice
- 1 avocado, diced
Cook the edamame according to package directions then rinse under cold water and let it cool. Add all the ingredients and serve immediately as a meal or a side salad.
