A food photographer I am not! This salad was so good that I wanted to take a picture of it and share the recipe with you. But when I looked back I realized it did not look half as good as it tasted. But trust me on this…it was delicious! And so healthy. The whole grains packed a load of fibre, the kale was loaded with nutrients. The apple added a crunch and a touch of sweetness that I loved and the chicken was added the protein punch I need in a meal.
Ingredients
- 1 cup of wild rice or farro
- 2 large chicken breasts or a rotisserie chicken
- 1 large diced sweet potato
- 1 large diced apple
- 1/4 cup nuts (I prefer walnuts or pecans but almonds are great too.)
- 3 cups of kale (massaged in a tsp of olive oil or fresh lemon)
- 2 tbsp crumbled goat cheese
Dressing
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/4 tsp dijon mustard
- 1 tbsp maple syrup1/4 tsp salt
Directions
- Start by rinsing and cooking your wild rice or farro or grain of your choice. I like it to be cooked and then a little cooled before I put it on my salad. Cook according to package directions.
- Next, roast your sweet potatoes in the oven at 425 for 25 minutes. Feel free to add any other veg you like. I add cauliflower or brussels sprouts a lot of the time.
- If you are baking your chicken breasts from scratch then put them in the oven with the potatoes, otherwise, if using a rotisserie chicken you can chop it up when you chop your apple and kale.
- When your rice and sweet potatoes are cooking chop your, shred and massage your kale, and chop up your cooked chicken.
- Place all dressing ingredients together in a jar and shake it to blend!
- Time to assemble your bowl! I like to put the kale on the bottom and sprinkle the cooked whole grain on top. From there I put the chicken, apple and sweet potato. Next is the dressing, then the nuts and last but not least the feta cheese!

A little hint…other than massaging the kale and chopping the apple, all of these ingredients can be made days ahead of time, making assembly so quick and easy when you are ready for it!
