In case you feel you aren’t getting enough vegetables in your life, I have a solution for you. This vegan Green Goddess dressing is basically a salad, pureed and poured on top of a salad! Lol. You think I’m joking don’t you… 😉

Ingredients

  • 1/4 cup chives
  • 1/2 cup of parsley
  • 1 cup baby spinach
  • 1/2 avocado (or 1/4 cup olive oil)
  • 1/4 cup cashews
  • 1 – 2 tbsp nutritional yeast
  • Juice of 1/2 – 1 lemon
  • 1/2 cup water
  • 1/4 – 1/2 tsp sea salt

Directions

Place all the ingredients together in a blender and blend until smooth. Pour over your favourite salad greens, drizzle on top of your buddha bowl or your favourite roasted veggies.

Note: You can play with this recipe a lot. For example, to make a tex mex type dressing replace the parsley with cilantro, the lemon with lime and add 1/2 tsp of cumin. Mmm, mmm good! Or add a handful of fresh herbs like basil or tarragon for a fresh twist.
