In case you feel you aren’t getting enough vegetables in your life, I have a solution for you. This Green Goddess salad is basically a salad, pureed and poured on top of a salad! Lol. You think I’m joking don’t you… 😉
Ingredients
Salad
- 1/2 head of green cabbage, finely chopped
- 3 persian cucumbers, finely chopped
- 1 bundle of green onions, chopped
Dressing
- 1 cup baby spinach
- 1 cup fresh basil
- 1 garlic clove
- 1 small shallot
- 2 lemons juiced
- 1/4 cup olive oil
- 1/4 cup cashews
- 1/3 cup freshly grated parmesan cheese (vegans replace this with nutritional yeast)
- 2 tablespoons rice vinegar
- 1 teaspoon salt
Directions
Chop the cabbage and cucumbers and green onions and place in a bowl. I personally like to dice them all until they are all quite small and a uniform size.
Add all the dressing ingredients into a food processor and blend until smooth.
Pour the dressing over the vegetables and toss to combine.
This can be served as a huge side salad or enjoyed with tortilla chips for a super healthy, fibre rich salsa like dip.
Note: It makes a HUGE salad so be warned, if you aren’t prepared to feed an army, or if you don’t want to eat the leftovers for the next few days make a smaller version!
