I’m not a huge baker but my son LOVES muffins so I have tried over the years to find an option that I can happily serve him, guilt free. These ones have definitely made the cut. What I love is that they have no refined sugar, are high in fibre, healthy protein and good fats and they keep you full for hours…and I mean hours!
Ingredients
- 1 cup coconut flour
- 1/2 tsp sea salt
- 1 tsp baking soda
- 1/2 cup raw honey
- 1 cup coconut milk
- 6 eggs
- 1/4 coconut oil, melted
- 4 tsp vanilla extract
- 1/4 cup chia seeds
- 1 cup blueberries
Directions
Preheat the oven to 350’F. Sift the coconut flour, salt and baking soda in a bowl. In a separate bowl or blender, whisk honey, coconut milk, eggs, coconut oil and vanilla. Stir wet mixture into dry ingredients and mix in chia seeds. Fold in the blueberries and pour the batter into greased or lined muffin tins, filling about 3/4 full.
Bake for 25 minutes until muffins begin to turn golden brown and are cooked through. Immediately remove from tins and cool!
