- 5 sprigs of kale — approximately 4 cups of chopped kale
- 1 finely diced celery stalk
- 1 thinly diced apple of choice
- 7-8 toasted walnuts
For the dressing
- 2 tablespoons olive oil
- Juice of 1/2 a lemon — to taste
- Salt to taste
Wash, dry and chop up the kale until it is shredded. Pour the dressing on and massage it in. (Some people don’t like to get their hands dirty but trust me, it’s worth it.) Add the celery, apple and toasted walnuts. Enjoy!
Options: You can replace the walnuts with pumpkin seeds, almonds or pecans and the apples with pears. This salad also tastes delicious with a bit of crumbled feta or grated parmesan on it or some dried cranberry’s for some sweetness.
