Looking for a quick and healthy snack that will leave you satisfied for hours? Look no further! These healthy Lemon Vanilla Protein Balls are packed with good fats, healthy protein, lots of fibre and vitamin C rich lemon. These are the perfect no sugar added, no bake snack or treat!

INGREDIENTS
1 cup raw almonds*
1 cup pitted dates
1/2 cup vanilla protein powder**
1/4 cup chia seeds or coconut (optional)
1/2 tsp sea salt
zest, 1 lemon
juice, 1/2 lemon
extra coconut flakes for rolling the balls in

INSTRUCTIONS
1) Add almonds and dates to a food processor and process until it reaches a crumbly consistency.

2) Mix in protein powder and chia seeds/coconut and process until combined.

3) Add in sea salt, lemon zest and juice and continue processing until mixture comes together into one big sticky ball.

4)Scoop out tablespoon sized chunks and roll into balls, roll in the coconut if you choose to.

5) Store these protein balls in the refrigerator for several weeks or longer in freezer.

*You can replace almonds with cashews for a similar taste and a smoother texture.

**You can use any protein powder you like but I have found that whey protein works well and absorbs easily. Because the dates are already sweet I don’t recommend a sweetened protein powder or these get too sweet for my liking.
